The staple of a great ski holiday is good food. Cooking with care, attention to details and using ingredients in season, and focus on the simple things done well is key to our menus. Atlas Ski Co only hire professional chefs to work in our catered ski chalets. We work closely with our team to put dishes together that we are proud of, that are appropriate for the season, that are exciting to cook and most importantly great to eat.
We love classical and modern cookery, but not unneccesary fluff; we want to bring out the flavours in ingredients, we want you to know that we care about what goes on your plate, we do not cook for egos, we cook for you. The snow can be perfect, the weather incredible and the pistes quiet but if the food is found lacking your holiday will be lesser for it. Atlas Ski Co won't let that happen.
Why we love food
It's not just our love of food, but our love of why we sit down together and enjoy dinner that's important. To us, dinner is not just something to fill you up after skiing - which in itself is important after days expending lots of energy on the slopes - but it's an opportunity to try something new, from a different cuisine, an ingredient you might not know, or just prepared differently. It's the chance to sit and enjoy quality time with friends, old and new, and re-tell stories from the day just gone.
Through running catered holidays across France & Italy for a number of years, throughout all seasons, we've had a unique opportunity to create a dinner experience that brings together multiple cultures; maybe it's something from our multi-national staff, or something we've picked up from tiny Italian Osteria's tucked away in the mountains.
We understand that dinner should be something enjoyable, not too complex or pretentious, but it should be interesting, nutritious and leave you wanting more! Our staff understand this too, which is why keep hold of them year round, providing a space to develop as we do, and offer something more special each season. You won't find chef's straight out of college cooking spag bol in our chalets, but professional chefs dedicated to providing something to savour.
How we cook
The cornerstone to great cooking is sourcing ingredients that make sense to your environment and cooking them with attention, care and love.
Our food does not aim to be fancy, luxury or be something it is not. We are not going to tell you the food is Michelin star level and we are not going to prepare a 7 course tasting menu.
What we will do is carefully consider what is high quality produce is available to us in the mountains, and curate a menu that offers our clients what we would love to eat after a hard day on the slopes. Interesting, honest food that is approachable, yet interesting, filling yet also light. We want you to feel excited for whats to come and satisfied by what you have had both physically and emotionally.
We use butter, olive oil, salt, pepper, spices, herbs and technique, we don't buy anything in, we use whole foods and real ingredients, we shop at he local butcher. You are in the hands of professionals that care about genuine hospitality.
How we choose our wine
To some, wine makes or breaks a dinner. Wine is both romantic, essential, challenging and subjective.
Our aim with the wine we serve is to make it approachable, generous and honest for those that simply want to enjoy a glass with dinner, but has details for those that wish to engage further.
We use Schott Zweisel glassware, because the glass you drink from matters.
We have a house Sangiovese from Emilia Romagna for the red, because the crunchy tannins and sappy acidity, with plump red cherry fruits are suited both to just drinking but also great fodder to almost any dish.
We also offer a house white blend from Sicily (Grecanico & Inzolia) because it's soft, clean, refreshing and yet structured enough to stand next to more robust dishes.
We also offer a richer white and red as house wine options for people who prefer that style of wine, Malbec, Cabernet Sauvignon, Chardonnay, Marsanne and others rotate from our guest house wines.
We also have a reserve wine list of personal favourites, the kind of wines we'd reach for in the cellar, short and concise with enough interest from anyone to wine writers and amateur enthusiasts.
We'll serve wine professionally but not stuffy. If you want it on the table, no problem, you pour, we pour, no problem, we just want to make sure you have a personable, easy experience at the dinner table with service that is there before you think you need it.
Our Staff
Head of Operations and Co-Owner - Ben Richards
An ex-sommelier, Ben brings a wealth of knowledge gained from stints at high end in Australia. With a keen eye for detail, as well as flavours and presentation, Ben's real skill is knowing exactly how things should be done. From the plate presentation, the smear of Jus and just when to top up a wine glass. This is imparted on each of our staff, ensuring you are well looked after from the moment you walk in the chalet.
Head Chef - Matt Hartley
Our head chef for a number of years, Matt has an ability to leave guests speechless with his dinner each night. Alongside Ben, Matt has developed and honed the menu to perfection, using in-season, local produce to create dinners that let you know you're in the French alps, but have a taste of home, with a hint of something from any number of our other destinations.

Dietary requirements
At Atlas Ski Co, we can cater for almost any medical dietary need. If you can give us the information in good time we can feed you well.
In today's world allergies and intolerances are more common than ever so we take any concern seriously. If you are a fussy eater we will do everything we can to tone down dishes to make them more approachable, but if you are just a ‘pizza and chips’ kind of person then we are afraid that we cannot cater for this while catering for the rest of our clients.
We do ask that if your dietary request is in, that you consider the ordering and preparation have specifically occurred for you. Any changes to your needs should be made the day before and you can do this by informing our team on the ground.
KIDS glorious KIDS
We love kids, we have them, and we understand them. We’ll serve kids a separate meal at a separate time, or we’re more than happy to have them sit with the adults and eat a toned-down version of your meals or the same. Every kid is different. Our children's meals aim to be nutritious and easy to eat.
